In this time of the year, with the first signs of cold weather, sometimes we just want to pamper ourselves a little bit, staying warm under a soft blanket, reading a good book.
So, why don’t treat ourselves with a delicious slice of homemade cake?
The recipe we are sharing with you today is a “Carrot, coconut & almond cake”, which is so easy and fast to bake, that you will never have enough!

Ingredients:
300g of carrots
3 eggs
150g of almonds
150g sugar (or even better, brown sugar)
150g coconut flour
1 packet of yeats
200g of dark chocolate (for the frosting)

Method:
Peel, chop the carrots and then put them in a bowl. Chop the almonds with the sugar and then combine the result with the carrots.
In the same bowl add the coconut flour, the eggs and the yeast and stir well till everything is combined.

Pour the mixture in a baking pan (if it’s not a silicone one, you should grease it with a little bit of butter), put everything in the owen and bake it at 160° C for 10 minutes. Then bake the cake for other 35 minutes at 180°C.

The cake is ready to come off the owen once it’s golden brown and a
skewer inserted into the centre comes out clean. While the cake is cooling down a bit, you can melt the chocolate in a bain marie. When the cake has cooled down completely, pour the chocolate frosting on top of it and, with the help of a knife or a spatula, smooth it out on top and on the sides.

Once the frosting has harden, the cake is ready!
